Wild Rice Stuffed Fish Fillets

• 1/4 cup dry bread cubes (1/4 inch)
• 1/2 tsp. lemon peel finely shredded
• 4 tsp. lemon juice
• 1 tsp. parsley flakes
• 1/4 tsp. salt
• 1/4 tsp. curry powder
• dash of pepper
• 2 tbsp. butter or margarine
• 4 lemon slices
• 1 tsp. parsley flakes

Combine wild rice, water and cook (basic recipe), set aside. Sprinkle fillets with a little salt and pepper. Saute celery and onions in 1 tbsp. butter or margarine. Add bread cubes, cooked wild rice, lemon peel, lemon juice, parsley flakes, salt, curry and pepper. Mix well. Wrap 1/4 of the stuffing inside each fillet; secure with toothpicks. Place fillets in greased baking pan; brush with 1 tbsp. butter or margarine; bake uncovered for 20 minutes at 350°, or until fish is done. Remove from oven; brush with remaining butter or margarine and garnish with lemon slices and parsley flakes. Serves 4.
