Gourmet Wild Rice Casserole

• 1 Cup Wild Rice
• 1/4 Tsp Salt
• 3 Cups Boiling Water
• 1/2 Lb Mushrooms, Sliced
• 1/2 Cup Chopped Onion

• 1/2 Cup Butter Or Margarine
• 1 Cup Grated Old Chedder Cheese

• 1 Cup Ripe Sliced Olives
• 18 Oz Can Tomatoes,chopped & Drained
• 1 Tsp Salt
• Pepper To Taste
• 1 Cup Water Or Juice From Tomatoes

Rinse Rice And Drain. Put Rice In Pan With 3 Cups Salted Water And Bring To A Boil…turn Down Heat And Simmer 30 Minutes. Turn Off Heat And Let Stand 30 Minutes. Drain. Sauté Onions And Mushrooms In Butter For About 5 Minutes. Toss Rice With All Ingredients. Place In 2 Quart Casserole, Cover And Bake For 1 Hour At 350 Degrees F. May Be Prepared A Day Ahead.
